Thai Turkey Burgers

Perfect for a light lunch, these turkey burgers are real quick and easy to make, serve it with some spiced up broccoli for a high protein, low carbs meal.  You can get 4 servings out of this lot, so freeze patties for another time or just munch on them all week.

Ingredients:

  • 500g lean turkey
  • 10g fresh coriander, chopped
  • 5g fresh red chilli, chopped
  • ½ lime juice and zest
  • 20g spring onions, chopped
  • 2 tablespoon reduced salt soy sauce
  • 200g broccoli
  • 5g ginger
  • 1garlic glove
  • 1 tsp lucy bee coconut oil

How to cook:

  1. Pre-heat oven to 160°c fan / 180 °c electric / gas mark 4.
  2. Get yourself a large mixing bowl and throw in the turkey mince, coriander, chilli, lime juice and zest, spring onions, 1 tablespoon soy sauce (save the 2nd tbsp for the broccoli), salt and pepper then mash together with your hands.  From this mixture you should be able to make x8 small patties.
  3. Heat a griddle pan until steaming hot, then cook your burgers for around 2/3 minutes on each side or until nicely browned all over.  Transfer over to a baking tray and finish them off in the pre-heated oven for around 10 minutes to make sure they are cooked through.
  4. Whilst the burgers are in the oven, steam your broccoli for around 3 minutes.
  5. Meanwhile heat the oil in a large wok, fry off the garlic and ginger for 1 minute before adding the broccoli.  Continue to stir fry for a further 2 minutes, add the soy sauce to add flavour to the broccoli then serve with the burgers.
