Short On Time Tuna

I’m not usually an advocate of ‘convenience’ food – as in pre-chopped veg, as I believe your money can stretch much further when purchasing the raw ingredients and doing it yourself, but when you’ve just had one of those days, when your plan goes out the window with no time for meal planning or prep, it works in your favour to grab a ‘high quality’ pre packaged raw veg stir fry and whip yourself up a healthy dish in no time…

Macros: per serving

  • FAT – 11g
  • CARBS – 44g
  • PROTEIN – 51g

Ingredients:

  • 2 tuna steaks (150g each)
  • 1 240g container of Sainsbury’s Taste the Difference Tenderstem Broccoli stir fry.
  • 1 tbsp fresh ginger finely chopped
  • 1 garlic clove crushed
  • 1 red chilli chopped
  • 1 tbsp soy sauce
  • 1 tsp Lucy Bee Coconut oil
  • 50g vermicelli noodles (optional)

How to cook:

 

  1. (optional) Boil noodles according to specified instructions on the pack.
  2. Heat the coconut oil in a large wok and throw in the packaged veg, with the garlic, chilli and ginger, continually stirring for around 5 minutes.  Add a slash of water to help steam the veg in the wok slightly.
  3. Meanwhile heat a griddle pan to a high heat and cook the tuna steaks for around 1 minute on each side for a nice pink middle.
  4. Add a splash of soy sauce to the veg to finish off and serve with noodles if desired and tuna on top.
