Spiced Coconut Salmon

Coconut oil is now extensively used thanks to its wide health benefits which include but are not limited to: hair/skin care, improving digestion and immunity against all manner of diseases, which is great, but what about coconut flesh?

Like the oil, coconut flesh is to be consumed in moderation to being high in saturated fat, but it’s not to be avoided completely as it’s rich in iron, fiber and other important minerals such as copper and manganese which support healthy collagen production keeping your tissues and bones healthy and strong.

Serves 2 / calories per serving = 377 cals

Macros per serving:

  • FAT – 23g
  • CARBS – 14g
  • PROTEIN – 31g

Ingredients:

  • 240g Salmon fillets
  • 120g Spinach, rocket & watercress Salad
  • 20 g(s), Radishes, raw
  • 20g Cucumber
  • 1 teaspoon Lucy Bee coconut oil
  • 1 tbsp desiccated coconut
  • ½ red chilli, finely chopped
  • 1 tsp grated fresh ginger
  • 1 clove garlic, finely chopped
  • ½ tsp ground cumin
  • ½ tsp turmeric
  • 1 tbsp fresh Coriander

For salad dressing:

  • 1 tbsp(s), Soy sauce
  • 1 tbsp(s), Honey
  • 1 tbsp(s), Lime juice – Raw

How to prepare:

  1. Pre-heat oven to 160c fan / 180c electric /gas mark 4
  2. Mix together the soy, honey and lime juice to create a dressing for the salad and set aside.
  3. Heat oil in a non-stick pan on a medium heat and add the garlic and ginger, cook lightly for 2 minutes before adding the desiccated coconut. Continually stir the coconut until it starts to lightly brown.
  4. Add the rest of the spices to the pan: cumin, turmeric, season with salt and pepper and stir for a couple more minutes to release the aromas before allowing to cool.
  5. Once cooled roll the salmon the in coconut mix, covering all sides with a thick crumbly layer. Bake the salmon in the pre-heated oven for around 10 minutes for a nice opaque middle.
  6. Whilst the salmon is cooking prepare your salad by tossing together the salad leaves, coriander, radishes, cucumber with your pre-made dressing.
  7. Once cooked, serve the salmon immediately with the salad.
