Salmon & Broccoli Bake

 

Healthy and nutritious comfort food at it’s best.  To reduce the fat content just reduce the amount of creme fraiche or use a low fat version.  To reduce the carb content just reduce the sweet potato or replace it with any other low carb veg such as spinach or asparagus.  Nutrition is flexible and can always be adapted to your specific needs.

Serves x2 / calories per serving = 548 cals

Macros per serving:

  • FAT – 36g
  • CARBS – 25g
  • PROTEIN – 33g

Ingredients:

  • 260g salmon, cut into large cubes
  • 170g sweet potato, peeled & cubed
  • 140g broccoli, roughly chopped
  • 150ml crème fraiche
  • 20g grated parmesan
  • 1 tbsp wholegrain mustard
  • 1 wedge lemon
  • salt & pepper

How To Cook:

  1. Steam or boil the sweet potato for 10-15 mins before adding the broccoli for just 5 more minutes until the sweet potato is soft and the broccoli has just started to soften but still has some crunch.
  2. Place the sweet potato and broccoli into a small baking dish and nestle the large salmon chunks amongst the veg.
  3. In a bowl mix together the crème fraiche, parmesan, wholegrain mustard, lemon juice and salt and pepper then spoon over the top of the veg and salmon spreading evenly before placing under a hot grill for 10-12 mins until the salmon is cooked and the sauce has started to turn golden on top. Any longer that 12 mins may overcook the salmon so just keep your eye on it.
