Quinoa & Tuna Steak Burgers

 

These are a great alternative to red meat or turkey burgers.  High protein, low carb, and a good way to consume more fish if you aren’t the biggest fan of eating fish on it’s own.

Makes x4 burgers / calories per burger = 189 cals

Macros per burger:

  • FAT – 6g
  • CARBS – 8g
  • PROTEIN – 26g

Ingredients:

  • 300g tuna steak, diced into small cubes
  • 50g quinoa
  • 250ml/9fl oz vegetable stock or water
  • 1/2 free-range egg, beaten
  • 1 tbsp Sukrin coconut flour
  • 1 tsp chopped fresh chilli, to taste)
  • 1 garlic cloves, crushed
  • 1tsp grated ginger
  • 3 spring onions, trimmed and finely sliced
  • Fresh coriander, chopped
  • salt and freshly ground black pepper
  • 1 tsp lucy bee coconut oil

 

How to prepare:

  1. Cook quinoa according to instructions on the pack, add a stock cube for added flavour. Once cooked, set aside and allow to cool.
  2. Once the quinoa has cooled, in a large bowl mix together all the ingredients, form into small patties and fry in the coconut oil for around 3 mins on each side.
  3. Serve with a side salad or other veg of your choice.
