Honey & Mustard Chicken

Ingredients:

  • 2 raw chicken breasts
  • 150g new potatoes
  • 300g courgette, chopped into bite sized chunks
  • 2 tbsp clear honey
  • 1 tbsp wholegrain mustard
  • 2 tbsp vegetable oil
  • 1 lemon
  • ½ tsp black pepper
  • 1 handful fresh rosemary

How To Cook:

  1. Pre-heat oven to 180°c (fan), 200°c (electric), gas mark 6
  2. Chop the potatoes into halves and boil them for 15-20 mins in salted water.
  3. Meanwhile in a bowl mix together the honey, mustard, black pepper and the zest and juice of just HALF of the lemon. Add the chicken breasts whole coat with the marinade then leave in the fridge until the potatoes are cooked.
  4. In an oven proof dish layer the bottom with the fine slices of the remaining ½ lemon and sprigs of rosemary before adding on top the courgette and drained potatoes. Drizzle the veg with the vegetable oil, season with salt and pepper then toss slightly to coat the veg in the oil. Add the chicken breasts on top of the veg, pour over any remaining marinade, cook in the preheated oven for 25-30 mins until the chicken is cooked though.
