Green Bean Salad With Grilled Chicken

 

Now is peak season for green beans: runner beans, sugar snap, any pod bean we love them all especially in summer as they make for a great easy nutritious salad for lunch, so give this one a try.

Serves x1 / calories per serving = 299 cals

Macros per serving:

  • FAT – 13g
  • CARBS – 11g
  • PROTEIN – 38g

Ingredients:

  • 100g raw chicken breast
  • 100g green beans, top & tails cut off
  • 50g plum tomatoes, quartered
  • 20g spring onions, finely diced
  • 30g feta, cubed
  • 1 tsp olive oil
  • 1 tsp red wine vinegar
  • 1 wedge lemon
  • salt & pepper

Green Bean Salad

How To Cook:

  1. Heat griddle to a medium high heat, season chicken breast with salt and pepper before adding to the griddle whole, cook for around 15 mins turning frequently until cooked through.
  2. Meanwhile bring a pan of water to the boil, add the green beans for around 5 mins till tender then drain and transfer to a bowl. Add the chopped tomatoes, spring onions, drizzle with the olive oil and red wine vinegar, season with salt and pepper, toss well to coat all the ingredients then transfer to a plate.
  3. Sprinkle the bean mix with feta cheese, serve with the cooked chicken breast, then squeeze over some lemon juice before serving.
