Courgette, Chocolate Protein Brownies

Sounds weird but tastes great as a healthier alternative to those gooey treats we all know and love.  Use as a brilliant post work out snack for on the go

Makes x9 brownies / calories per brownie = 154 cals

Macros per Brownie:

  • FAT – 9g
  • CARBS – 11g
  • PROTEIN – 8g

Ingredients:

DRY INGREDIENTS:

  • 30 g Almond flour
  • 1 tbsp coco powder
  • 1 tsp baking powder
  • X2 50ml scoop choc protein powder
  • ½ teaspoon cinnamon

WET INGREDIENTS:

  • 250g courgettes, grated with juice squeezed out.
  • 3 eggs
  • 2 tbsp honey
  • 3 tbsp coconut oil (melted)
  • 1 tbsp applesauce
  • 2 tbsp greek yogurt

How To Cook:

  1. Preheat oven to 180 fan / 200 electric / gas mark 6
  2. Grease the brownie tin with oil or butter and line with baking paper
  3. In one large bowl sift together the dry ingredients and mix well
  4. In a second bowl mix together the wet ingredients, being sure to squeeze out as much moisture from the courgette as possible, then start to mix the wet ingredients into the dry ingredients creating your brownie batter.
  5. Pour into the lined brownie tin and bake in the pre-heated oven for 20-25 min’s until a knife comes out of the batter clean.
  6. Leave to cool before cutting into pieces.
