Chicken And Courgette Pasta With Avocado Sauce

I love this go to recipe when I’m strapped for time and need to get my fat macros in before the end of the day.  Effortless prep, although I would recommend you get yourself a Spiralizer, to avoid having to cut your courgette into Linguine type strips which can take some time.

If you’ve been under a rock recently and don’t have a clue what a Spiralizer is then your life is about to be revolutionised, as they are bloody brilliant!  Spiralizers turn raw vegetables into strips to be used as a substitute to pasta.  You’re welcome.

Ingredients:

  • 300g (x2 breasts) chicken breasts
  • 250g (x1 med) courgette for spiralling
  • 200g (x1lrg) red pepper
  • 240g (x2 med) avocadoes
  • 100g (3 tbls) greek yogurt
  • 20g (x1 tbsp) coconut oil
  • 1 tbsp paprika & cayenne pepper
  • 1 clove garlic
  • 1 tbsp fresh basil
  • 1 lemon

How to cook:

  1. Remove the pits from two large avocados.
  2. Pulse-blend the avocados, Greek yogurt, garlic, basil and juice from 1 lemon. Once blended and the texture is smooth, add salt and pepper to taste.
  3. Sauté the courgette strips in a little coconut oil until slightly limp and set aside.
  4. Season your chicken breast with the paprika and cayenne and cook in a nonstick pan with the reminder of the oil. Once browned, add the chopped red pepper and continue to cook for 5 mins.
  5. Mix the avocado pasta sauce with the courgette pasta, and then top with grilled chicken breast and serve.
