Asian Beef Stir-fry

Ingredients:

  • 100g lean steak
  • 70g tender stem broccoli
  • 50g mange tout
  • 70g red pepper, sliced
  • 50g red onion, finely sliced
  • 1 clove garlic, chopped
  • 10g ginger, finely chopped
  • 2 tbsp fresh coriander, chopped
  • ½ red chilli, finely chopped
  • 1 tbsp soy sauce
  • Juice ¼ lime
  • Salt and pepper
  • 2 tsp lucy bee coconut oil

How To Cook:

  1. Steam the broccoli for 3-5 mins to soften then leave aside
  2. Season the steak with salt and pepper on both sides then cut into finger sized strips. Heat 1 tsp of coconut oil in a large wok then stir fry the steak for 3-5 mins for a pink, juicy middle, longer if you like your meat well done. Once cooked to liking set aside to rest.
  3. Heat the remaining oil in the wok, add the onions first for a few moments to soften, then add the rest of the veg along with the chilli, garlic and ginger. Continue to stir fry for 5-8 mins, being careful to not overcook, you still want some bite in the veg.
  4. Once you are happy with the veg, pour in the soy sauce and lime juice, add the steak and fresh coriander, mix together and then serve immediately.
