Almond Butter Chicken

Yes…. this does taste as good as it sounds.  Serve with any veg of your liking, it’s the chicken in this dish which steals the show.

Serves x2 / calories = 209 cals

Macros:

  • FAT – 6g
  • CARBS – 9g
  • PROTEIN – 33g

Ingredients:

  • 250g chicken breasts (Athleat Meats)
  • ½ tbsp. almond butter (Meridian)
  • 1 tbsp Greek yogurt
  • 1 tsp. lemon juice
  • ½ garlic clove, crushed
  • 1tbsp fresh coriander, chopped
  • 1 tbsp almond flakes
  • 200g green beans

How to prepare:

  1. Pre-heat oven to 180c fan / 200 electric / gas mark 6
  2. Place the chicken breasts in-between two sheets of cling film, then bash them with a rolling pin to flatten to around 1-2cm thin before transferring onto a baking tray.
  3. In a bowl mix together the almond butter, yogurt, lemon juice, garlic and coriander, then spread over the top of the chicken breasts, season with salt and pepper, sprinkle over the flaked almonds then cook in the oven for 15 mins until cooked through.
  4. 5 mins before the chicken is ready: steam or boil your green beans then serve immediately with the chicken.
